On our journey to develop our range of INDI & Cº Mixers, our research has taken us back centuries to when the traditions of preserving and distilling first began in El Puerto de Santa María, the Guadalquivir Valley, in Andalucia, Spain.

For hundreds of years the aromatic herbs, lemons and oranges, for which the area around Sevilla has become famous, have been dried and used for medicinal and culinary purposes.

Mix these traditions with the arrival of exotic ingredients such as quinine and vanilla, from the West Indies in the 16th century and a whole new way of mixing, blending and distilling the best of the Mediterranean and Caribbean started to develop.

Indeed the Municipal Archive in Cádiz has records dating back to the 17th century describing the distilling of different botanical plants, like quinine and citrus fruits.

The idea of partaking of quinine based drinks for medicinal purposes soon spread across Europe, and to the Indies thanks to the East India Company. Consequently quinine became the principle ingredient in Tonic Water.

INDI & Cº mixers is the culmination of years of knowledge and experimentation into the ways in which the many Mediterranean and Oriental plants available can be macerated and distilled to extract the purest and most intense aromas and flavours.

We use traditional methods of maceration, fermentation and distillation from the very best ingredients which our team carefully selects in our home country of Spain, the West Indies and the East.

SELECTION OF THE FINEST BOTANICALS

Guided by our master blender, the team chooses different botanical ingredients in the best condition; some of which are air-dried in order to preserve their essential characteristics and intensity of flavours.

Quinine, Orange peel from Seville, Kewra from India, Japonese Yuzu and Kalamansi from the Phillipines are all used in the INDI & CO mixers, alongside the best lemon and lime juices, pure water, white and cane sugar.

CAREFUL MACERATION

After the careful selection of the finest ingredients, the traditional process of macerating all of the different fruits, herbs and plants separately begins, a process unique to the INDI & CO Mixers.

This maceration process goes on for several weeks in order to extract all the soluble components. The result is a rich concentrate which our master blender distills in century-old alembic stills. The distillation process is done very gently and incredibly slowly, a technique known as “au bain-marie” as in cooking, in order to extract all of the volatile elements in essential oils.

This is why our INDI & CO Mixers contain all of the original aromas and flavours without changing the natural properties of each ingredient.

To complete this unique production process the concentrates obtained from the distilling process are combined with fresh fruit juices, sugars and purified water to make totally natural, balanced mixers.
